I may be completely missing a setting somewhere, but is there an option to have everything show unblured in card view on jerboa?

No, currently there is no option like that in Lemmy, thus, no option in Jerboa as well.
There is however, a pull request on GitHub awaiting approval (and some changes) for this feature.
