Why is it so hard for some people to just say “ok” and move on because it’s important to the other person. ESPECIALLY if “it’s no big deal” then just do it and see how much more your NB and trans friends feel comfortable

NTA- he’s gotta sort out his own feelings of discomfort about the concept you just presented this poor sheltered man, and that’s his choice to make.
That being said, you might not have wanted to bring this up at a work event since this is the kind of honesty that the social contract usually keeps between more friendly relationships. You may find your experience at the office is different now depending on how office politics trends. You may find some people approve of what you said, bit I’ll bet management won’t like it. Not that they can do anything about it legally, but you might find yourself the target of less than favorable consideration. I don’t you’ll get fired or any kind of overt retaliation, more just that this person and anyone who “takes his side” will at the least be less friendly and helpful.
I’d say you should have stayed quiet, but not for ‘Jack’. Teaching an asshole a life lesson shouldn’t cost you your own peace of mind at work
You can’t both bridge your current router and use it for WiFi AP because of the hierarchy of the network. You’ll need either a compatible AP-capable WiFi radio in your be router (hard to find, limited compatibility, I think you might top out at WiFi 4e (ac1350) in terms of what hardware is available.
Alternatively, you can use a dedicated access point alongside your new router which is easier and will get you better, more up to date, technology
Get yourself a decent router capable of running OpenWRT, which will allow you to set up vlan’s for your lab, and (I would also recommend) another separate vlan for your IoT and other “smart” devices.
The TP-Link Archer C7 is old but reliable and has a lot of open source support.
If you’re feeling more adventurous You could also build your own router with any computer that’s got two or more Ethernet ports using PFSense, Firewall-NG, or IPFire
